A Visual Guide to the Cuts of a Cow: Learn Where Every Beef Cut Comes From!

In this video, you will see Seth and Scott, the Bearded Butchers, break down a side of beef and lay the individual meat cuts out on a diagram explaining where every cut of beef comes from on the carcass. They also discuss the different types of beef cuts, such as steaks, roasts, trimmings, bones, and fat.

What?! How can they be out of meat?!

Did you know that we  typically do not process animals during the winter months? (Dec-March) There are few reasons why!


In the winter, roughly (December-March) months we slow way down on production and are usually out of our more popular items. Its all for good reason!  I know its a sad day when you realize that we are sold out of your staples and so we highly recommend that you stock up in the fall especially with that ground beef and roasts.  We normally sell every last pound of beef in our freezers. So get it while you can! 


Key points about why fresh grass is preferred:


  • Higher nutritional value:  Fresh grass has a higher concentration of vitamins, minerals, and antioxidants compared to hay, which loses a significant amount of these nutrients during the drying process. 
  • Better digestibility: Cows can digest fresh grass more efficiently than hay, allowing them to absorb more nutrients from their diet. 
  • Optimal taste and texture: Grazing on fresh pasture contributes to a richer flavor and better texture in the resulting beef compared to cattle fed primarily on hay. 
  • Natural grazing behavior: Cows are naturally designed to graze on fresh grass, so feeding them primarily on pasture aligns with their biological needs. 

However, it's important to note that:

  • Hay is still necessary: While fresh grass is ideal, hay is crucial during winter months when pasture is not available, allowing for year-round grass-fed beef production. 
  • Quality of hay matters: High-quality hay, harvested at the proper stage of maturity, can still provide adequate nutrition for cattle. 


And most of all we like to give our precious herd and our hard working farmer a much needed break, winters are hard enough as it is.
